Cool Down with Cool Curry

Many people think of curry powder as a single spice, but it is actually a blend of spices, resulting in an enticing aroma and flavor. The golden color comes from the spice, turmeric, which contains a yellow pigment called curcumin - shown to have strong anti-inflammatory properties and often used to ease joint discomfort and swelling. It also supports heart health and circulation and stimulates the flow of digestive juices, helping to prevent acid buildup. Curried Egg and Artichoke Dip

6 hard-cooked eggs
1 can water-packed artichoke hearts
1/2 cup mayonnaise
1/2 cup sour cream

Chop eggs and artichokes coarsely.
Combine remaining ingredients and stir gently into egg/artichoke mixture.
Serve with whole-grain crackers.
